Après le creux estival, l’offre augmente au moment où la découpe peine déjà à se maintenir.
À retenir : sans parler d’une production exceptionnelle, le marché doit absorber davantage de viande. Avec la faiblesse actuelle des flancs, des jambons et des longes, cette remontée saisonnière ajoute de la pression. Il faudra une demande capable d’absorber ces volumes pour stabiliser la découpe.
